 Weight Watchers Lime Chicken Tacos Recipe with cilantro, red wine vinegar, garlic, green onions, and flour tortillas.

INGREDIENTS

  • 1½ lbs skinless, boneless chicken breast cubed
  • 1 tsp sugar
  • ½ lime juiced
  • ⅛ cup red wine vinegar
  • 2 cloves garlic minced
  • 2 medium green onions chopped
  • ½ tsp salt
  • 1 tsp fresh cilantro chopped
  • ½ tsp ground black pepper
  • 10 flour tortillas – (6 inch)
  • ¼ cup lettuce shredded
  • 1 tomato diced
  • ¼ cup salsa
  • ¼ cup  Monterey Jack cheese shredded

INSTRUCTIONS

  • Using a medium sized saucepan, add chicken and saute over medium- high heat approx 20 minutes.
  • Add in sugar, lime juice, red wine vinegar, garlic, green onions, cilantro, salt, and pepper. Reduce heat and simmer for 10 minutes.
  • Using an iron skillet, heat over medium heat.
  • One at a time, put a tortilla in the preheated skillet. Warm one side, then flip to warm the 2nd side. Continue with the rest of the tortillas.
  • Using 1/10th of the chicken mix, fill each warm tortilla. Add lettuce, tomato, salsa, and Monterey Jack cheese. Serve.
