- 1½ pounds extra-lean ground chicken (98% fat-free)
- 1 packet low-sodium taco seasoning (such as Mrs. Dash or similar)

- 1 (15-ounce) can corn, drained
- 4 Roma tomatoes, diced
- 1 bunch scallions, sliced
- 6 tablespoons or more fat-free salsa or pico de gallo
- 12 tablespoons fat-free shredded cheddar cheese
- Cooked rice of your choice (see notes above)
- 6 tablespoons Greek yogurt (optional topping)
Directions
- Heat a large nonstick skillet over medium heat. Add the ground chicken and cook, breaking it apart as it browns, until fully cooked and no longer pink. Stir in the taco seasoning along with ¾ cup of water. Let the mixture simmer for about 3 to 5 minutes, then remove from the heat.
- While the chicken is cooking, prepare the remaining ingredients. Drain and rinse the black beans and corn. Chop the tomatoes and slice the scallions so everything is ready for assembly.
- To prepare the rice, combine 1 cup of instant rice with 2 cups of water in a medium saucepan. Bring the mixture to a boil, then turn off the heat and cover. Let it sit until the water is completely absorbed and the rice is tender.
