- 12 oz 96% lean ground beef
- ½ cup chopped onion
- Salt, to taste

- 8 teaspoons mustard
- 4 oz reduced-fat shredded cheddar cheese
- 1 cup chopped fresh tomatoes
- 8 teaspoons finely chopped dill gherkins (pickles)
- 1 cup chopped lettuce
Instructions
- Preheat a large cast-iron skillet over medium-high heat. Slice one tortilla into quarters and toast each piece for 1 minute per side, then allow to cool.
