Baked Balsamic Chicken with Tomatoes – Healthy Dinner Idea
Ingredients
For the Balsamic Glaze
- ⅓ cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil or avocado oil
- 2 garlic cloves, finely minced
- 1 teaspoon Italian seasoning
- 1 tablespoon Dijon mustard
- Salt and freshly ground black pepper, to taste
For the Tomato & Mozzarella Topping
- 8 ounces grape tomatoes, sliced in half
- 8 ounces fresh mozzarella balls (ciliegine or pearl size)
- 2 tablespoons chopped fresh basil
- Salt and black pepper, to taste
For the Chicken
- 2 pounds boneless, skinless chicken breasts, pounded to an even thickness
- 2 tablespoons avocado oil (or another oil suitable for high heat)
- Kosher salt and freshly cracked black pepper
Directions
- In a small bowl, combine the balsamic vinegar, honey, oil, garlic, Italian seasoning, and Dijon mustard. Whisk until smooth and season lightly with salt and pepper. Set aside.
- In another bowl, gently mix together the halved tomatoes, mozzarella, and basil. Add a pinch of salt and pepper and toss to combine. Reserve for later.
- Preheat your oven to 400°F.
- Place a large oven-safe skillet over medium-high heat and add the oil. Season the chicken breasts generously on both sides with salt and pepper. Once the skillet is hot and the oil is shimmering, arrange the chicken in a single layer. Sear for about 1–2 minutes per side, just until lightly golden.
- Pour the prepared balsamic mixture into the skillet. Allow it to bubble gently, and use a wooden spoon to loosen any browned bits from the bottom of the pan for extra flavor.
- Remove the skillet from the heat and spoon the tomato and mozzarella mixture evenly over the chicken.
- Transfer the uncovered skillet to the oven and bake for 18–23 minutes, or until the chicken reaches an internal temperature of 165°F. Let the dish rest for about 5 minutes before serving.
Notes
- Mozzarella: If using cherry-sized (ciliegine) mozzarella, cut each ball in half. Pearl-sized mozzarella can be left whole.
- Chicken Preparation: To flatten the chicken, place it between plastic wrap or inside a large zip-top bag. Gently pound with a meat mallet or rolling pin until evenly thick. This ensures even cooking and juicy results.
- Previous Version: An earlier version of this recipe used a soy sauce, tomato sauce, and lemon juice marinade instead of balsamic vinegar. For clarity and simplicity, balsamic vinegar is now used to achieve the same rich, tangy flavor in a more straightforward way.
