Easy Baked Keto Chicken Meatballs

 INGREDIENTS

  • 1 pound ground chicken 96% lean or lean ground turkey
  • 1 large egg
  • 1/2 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp Italian seasoning
  • 1 tbsp chopped parsley

INSTRUCTIONS

  • Preheat the oven to 400F/ 200C. Spray a sheet pan with cooking spray.
  • In a large bowl, add the ground chicken, egg, almond flour, grated parmesan cheese, olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix just until well combined.
  • Shape 16 1 inch sized meatballs and place them in the prepared baking dish.
  • Bake for 18-20 minutes, or until meatballs are cooked through. Sprinkle with fresh parsley, then serve over zucchini noodles, cauliflower mash, or as you desire.
