Low-Carb Cilantro Lime Salmon Skewers

 Ingredients

  • 3 Salmon Fillets
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Garlic Salt
  • 1 tsp Minced Garlic
  • Lime Juice from one lime
  • 1/4 cup Fresh Cilantro minced
  • 5.3 ounces Greek Yogurt plain
Low-Carb Cilantro Lime Salmon Skewers


Instructions

  • In a small bowl, stir together cumin, smoked paprika, garlic salt and pepper.
  • Cut salmon into 1 inch cubes. Toss with the dry rub.
  • Skewer the seasoned salmon; 4-5 on each skewer.
  • Depending on how you are cooking the skewers (grill, skillet, or nonstick griddle), cook for approximately 7-9 minutes, turning occasionally to sear all the sides of the salmon. **I cooked mine on a nonstick griddle.**
  • While the salmon is cooking, stir together yogurt, minced garlic, fresh cilantro and lime juice.
  • Once the salmon is cooked to your preference, remove from heat and drizzle with yogurt sauce.
  • Enjoy!
