Whole30 Chicken Recipes {Whole30 Mediterranean Chicken}

The best Whole30 recipes are those that keep on living well past the Whole30!  I’ve found that this is one of my favorite Whole30 chicken recipes that has stayed in regular rotation!


▢1 pound chicken breast

▢1 TB olive oil

▢1 onion sliced

▢1 jar marinated artichokes drained & chopped

▢1 jar sun-dried tomatoes drained & chopped

▢2 cloves garlic minced

▢1 bag baby spinach

Whole30 Chicken Recipes {Whole30 Mediterranean Chicken}


Preheat oven to 400 degrees.

Place chopped veggies in a glass baking dish sprayed with cooking spray.

Trim chicken of fat and season with salt, pepper and italian seasoning.

Heat 1 TB of olive oil in a skillet over medium heat.  Once the oil is heated but not smoking, add chicken to skillet.  Brown on each side for about 4 minutes.  Transfer to glass dish and set aside.

Add 1 teaspoon olive oil (if needed) to skillet.  Add garlic and cook for about 30 seconds or until fragrant.  Add spinach and cook until wilted.  Add spinach to glass dish.

Bake chicken for about 20 minutes or until they reach an internal temperature of 165 degrees.
