Keto Pecan Pie Muffins (Grain Free, Low Carb, Sugar Free)

 INGREDIENTS

  • 1 1/4 cup blanched almond flour
  • 2 tablespoon Coconut flour
  • 2 tablespoon granulated sweetener
  • 1/8 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 2 large Eggs
  • 5 tablespoon melted butter
  • 2 tablespoon sugar free maple syrup
  • 1/4 cup chopped pecans
  • 1/4 teaspoon liquid stevia or liquid monk fruit
  • 1/2 teaspoon maple extract
Keto Pecan Pie Muffins (Grain Free, Low Carb, Sugar Free)


INSTRUCTIONS

  • Preheat oven to 325ºF or if you don't have that setting go down to 300ºF
  • combine dry ingredients of almond flour, coconut flour, granulated sweetener, baking powder and salt
  • mix wet ingredients eggs, melted butter, liquid stevia, maple extract and sugar free maple syrup
  • combine both and after add in 1/4 cup of chopped pecans. You can even add pecans as a crust along the top
  • divide in 7 muffin cups and bake for about 20 minutes or until done. Can be tested by sticking a toothpick through center. If toothpick comes out clean muffins are done.
