Cheesy Buffalo Chicken Bites (keto + low carb)

 These Cheesy Buffalo Chicken Bites will be a new keto-friendly favorite! Cheesy almond flour bites are packed with spicy Buffalo Chicken for the perfect snack under 1 net carb! 

Ingredients

  • 1 1/2 cup chopped, cooked chicken
  • 3 ounces cream cheese, softened
  • 1 1/2 cup shredded cheddar
  • 3 eggs, beaten
  • 2 tablespoons chopped green onions
  • 1-2 tablespoons buffalo sauce (depending on how spicy you like things)
  • 3/4 cup almond flour
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Combine the cooked chicken and cream cheese until completely combined.
  3. Stir in the shredded cheese, eggs, green onions, buffalo sauce, almond flour and baking powder until a thick dough forms.
  4. Chill the dough 15 minutes. 
  5. Using a small cookie scoop to portion the bites out.
  6. Drop onto a silicone lined baking sheet and bake 15-18 min until golden brown and cooked through. 
  7. Serve with additional buffalo sauce and low carb ranch dressing for dipping.
