Instant Pot Meatloaf (Keto, Low Carb)

 Instant Pot meatloaf made low carb and gluten free! Using a pressure cooker results in a moist and delicious keto meatloaf in less time than cooking in an oven.

Cooking the dish under pressure involves a lot of steam because it’s what builds pressure. And the steam creates a very humid environment creating a moist and delicious keto meatloaf every time.


  • 1 pound ground beef
  • 2 eggs
  • 1 tablespoon Worcestershire sauce
  • ½ onion finely chopped
  • ⅓ cup pork rinds crushed
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoon garlic minced
  • 1 tablespoon parsley chopped
  • 2 teaspoon Italian Seasoning
  • ¼ cup Parmesan cheese grated
  • 1 cup beef broth or water
  • low carb ketchup optional

  1. Mix ground beef, eggs, Worcestershire sauce, onion, pork rinds, salt, pepper, garlic, parsley, Italian seasoning, and parmesan cheese together in a large bowl.
  2. Using a large piece of aluminum foil, create a loaf shape to hold the meatloaf.
  3. Shape your hamburger mixture into a meatloaf shape and set on the foil wrap.
  4. Place beef broth in Instant Pot.
  5. Grab the trivet and place your foil wrap holding your meatloaf onto the trivet.
  6. Carefully set inside Instant Pot.
  7. Ensure SEALING is set.
  8. PRESSURE COOK on HIGH for 25 minutes. Then do a quick pressure release.
  9. Once Meatloaf has cooked, brush with low carb ketchup and place on a baking sheet.
  10. Broil in the oven for 3-5 minutes until caramelized.
